We already know that we’ve scored the most beautiful location in town, but we’d like to think it’s our passion for and dedication to local cuisine that keeps people coming back again and again.
From the care taken over the sourcing of organic ingredients to our team’s meticulous experimentation to get each dish just right, the stunning sea views are one thing – but what goes on behind the scenes might just be where the real magic happens.
That’s because what arrives on your plate may look elegant and simple, but it is the culmination of thousands of hours of work. Fifteen years of gastronomical ideation, creation and refinement that puts quality, freshness and technique above all else.
Take Amante’s signature Arroz de Bogavante, for example, which sees creamy, Spanish-style rice and smoky char-grilled lobster come together in a melt-in-the mouth dream of a dish. Or Arroz Negro, a squid ink risotto that’s elevated by a succulent scallop and a delicate ‘alioli’ crust.
Ever wondered what our culinary team’s favourite menu item is? For head chef Jordi Tomás Ribas, there’s only one answer: Canelon de Rotja. Delicate cannelloni filled with local Ibizan fish and prawns topped with a sea urchin emulsion and served with a lobster tail tartare. “It’s the combination of flavours and the use of local seafood that really makes this dish stand out”, he explains.
However, this year, in addition to our usual menu, we’ve introduced an array of specials that change every two weeks, so even our most loyal fans have a reason to return as soon as their hunger does.
Blending traditional Mediterranean cuisine with international influences as always, you can expect some creative surprises too. Think finely sliced red tuna fillet served with salsa tonnata, caper bush and pickled onion; or Wagyu beef entrecote paired with a daikon salad and kimchi vinaigrette.
Of course, whatever you choose to indulge in when you visit, you can rely on the fact that everything you’re eating is seasonal, sustainable, locally-sourced and unmatched in quality. And given the unparalleled natural beauty of Amante’s surroundings, anything else would be a disservice …
